Whole Grain Chocolate Chip Banana Bread

Ingredients  

  • 100 g whole-grain flour of your choice wheat, spelt, einkorn, kamut, rye, etc.
  • 175 g all-purpose flour
  • 150 g brown sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp nutmeg
  • 2 overripe bananas 150-200g
  • 2 eggs
  • 190 g applesauce or yogurt or sour cream
  • 60 g butter
  • 1 cup chocolate chips

Instructions 

  1. Preheat your oven to 450°F.
  2. Prepare an 8" x 4" loaf pan by coating it with non-stick spray, lining it with parchment paper, using a silicone form, or greasing and flouring it.
  3. Melt the butter in a small pan, and while it's melting, add brown sugar to a medium mixing bowl.
  4. Once the butter is melted, combine it with the sugar and mix well.
  5. Add the eggs and mix until fully incorporated.
  6. Stir in the applesauce (or yogurt or sour cream), followed by the overripe bananas, and mix until smooth. Add vanilla and mix again.
  7. Gradually add the dry ingredients—whole-grain flour, all-purpose flour, salt, baking soda, and nutmeg—and mix just until combined.
  8. Gently fold in the chocolate chips, being careful not to over-mix.
  9. Pour the batter into your prepared pan, place it in the oven, and immediately reduce the temperature to 350°F.
  10. Bake for 60-70 minutes.
  11. Once done, remove the loaf from the pan, transfer it to a cooling rack, and allow it to cool before slicing and enjoying.

Notes

Putting banana bread into a hot oven and then reducing the temperature helps it rise better. The initial high heat gives the bread a quick lift, and then lowering the temperature allows it to bake evenly without burning the crust. This technique ensures a well-risen loaf with a tender inside.
