These meat and liver bites are the perfect solution for those busy days when you need a quick protein boost. Made with just a few simple ingredients, they pack a powerful protein punch in a convenient, on-the-go snack. Pair a couple of these with a carb for a satisfying lunch, or enjoy them as a quick and filling snack whenever you need an energy boost. While these aren't the prettiest snacks, they are very tasty and nutrient-dense.

Ingredients  

  • 1 lb Ground meat beef, chicken, turkey, pork
  • 2 oz. Ground liver beef or chicken
  • 2 Eggs
  • 1/2 Onion finely diced
  • 1 tbsp Garlic fresh and minced
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 tsp Thyme, cumin, chili flakes and/or parsley optional
  • 1 cup Shredded cheese optional

Instructions 

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Mixture: In a large bowl, combine all the ingredients. Mix well by hand or with a spoon until everything is evenly incorporated.
  3. Portion the Meat: Using a silicone muffin tray and muffin scoop, portion the meat mixture into each muffin cup. Make sure the cups are filled to the max, as the meat will shrink a bit while baking.
  4. Bake: Place the tray in the oven and bake for 20-25 minutes or until the bites are fully cooked through and browned on top.
  5. Cool and Store: Allow the meat bites to cool in the trays. Once cooled, you can store them in the fridge or for longer storage, flash freeze them and keep in the freezer for future use.
